Easy Chicken Fajitas in Foil Packets

A quick and easy way to prepare this spicy chicken, black beans, peppers and onions Mexican treat...and the clean-up is super easy!

Ingredients

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon ancho chili powder (optional)
  • 4 tablespoons melted butter
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tbsp olive oil
  • 4 4 ounce boneless skinless chicken thighs
  • 2 cups sliced bell peppers, any variety
  • 1 can black beans drained and rinsed
  • 1/2 cup sliced onion
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped cilantro (optional)
  • Toppings for serving avocado, sliced olives, salsa

Instructions

  1. Preheat the oven to 400 degrees.
  2. Mix together the chili powder, ancho chili powder, cumin, garlic powder, onion powder, salt and pepper.

  3. Divide the seasoning mixture in half. Stir one half into the melted butter.

  4. Spread olive oil thinly over 4 large squares of foil. Place a chicken thigh in the middle of each square of foil and sprinkle with the remaining spice mixture.

  5. Arrange the peppers, onion and beans around the chicken and drizzle 1 tablespoon of the butter mixture over the chicken and vegetables.

  6. Fold the foil up around the chicken mixture and crimp to close and seal completely in a packet.

  7. Place the foil packets on a baking sheet and bake for 45 minutes.

  8. Carefully open the foil packets...they'll be steaming hot. Sprinkle the cheese over the chicken and vegetables and return the packets to oven for a few minutes until cheese is melted.

  9. You can eat it right out of the packets or you can slice the chicken and arrange the chicken and vegetables on warm tortillas. Top with sour cream and avocado,  and if you like cilantro, sprinkle that on top.
