It’s finally summer, so it’s time once again for the best breakfast ever…Healthy Fruit Smoothies. The great thing about the following technique is that you can substitute just about any fruits and juices that you like…it’s all good.Â For this Hawaiian smoothie, I took fresh picked papayas and bananas, cut them into chunks and froze them overnight. To make the smoothie, put about a cup of frozen papaya chunks, a cup of frozen banana pieces, 6 oz. of your favorite blueberry yogurt (I use Dannon) into a blender and add about 3/4 cup of V8 Splash (available everywhere…I use Tropical Blend, but any flavor you prefer will do). Pulse the blender for about 30 seconds, and if necessary, give it a quick stir (make sure the blades have stopped!), and repeat a few times. If it appears too thick at this point you can take the top off the blender while it’s running (make sure all the fruit has been pureed before you do this or you may end up wearing some smoothie) and slowly pour in a little more Splash until you see a vortex begin to form in the center-you’ll know what I mean when you see it happen-and the Smoothie will have a perfect consistency. If you love peanut butter like I do, you can add a heaping tablespoon (I prefer chunky) and blend for a couple of seconds more…it’s incredible!Â For convenience, you can buy bags of chunked frozen fruit just about anywhere. I love the Costco brand..it has peaches, strawberries, pineapple and honeydew and comes in a 6 lb. bag. The secret, though, to a really great smoothie is the frozen bananas (I always keep a baggie full of frozen banana chunks in the freezer)…that’s what gives it the amazingly creamy consistency.
Oven Baked Buffalo Chicken Wings – A Great Super Bowl Party Recipe
One more great Super Bowl Party Recipe repost…but first, the backstory. Back in 1976, I was working at The Foundry restaurant in DC and one of the waiters, Michael Murphy, who happened to be from Buffalo, told us of the amazingly simple way they prepared, of all things, chicken wings, up there at a place called the Anchor Bar. We started giving away the Buffalo Chicken Wings during Happy Hour and immediately the place became packed each day at around 4:45 pm with everyone waiting for the wings to come out of the kitchen…and the rest is culinary history. It seems that every bar today has chicken wings on the menu, and for good reason…when they’re made right, they’re incredibly and addictingly (if that’s even a word) good! They’re actually very simple to make…cut 12 wings into three pieces at the joints (discard the wing tips or keep them for preparing stock) and just deep fry the flats and drummettes for 10-12 minutes in 375 degree oil (preferably peanut) until they’re crispy and golden brown, toss them in Frank’s Red Hot Sauce and serve with celery and bleu cheese dressing…that’s it…nothing else is needed. Crispy Baked Kale Chips – Another Simply Delicious Healthy Snack
Another simple, healthy snack that you’re guaranteed to love – a great alternative to potato chips (although they’re really good, too!)
- Tear the kale leaves into approx. 2″ bite size pieces (discard any thick stems)
- Wash and dry the pieces thoroughly (a salad spinner is best for this)
- Toss the dried leaves with theÂ Â¼ cup olive oil and Â¾ tsp of kosher salt, coating all pieces well
- Place them on a baking sheet and bake in a 350Ëš oven for about 10-13 minutes ’til crumbly and crisp
- Let cool and serve…
If you like, when you remove them from the oven, you can also sprinkle the crispy kale chips with some lime zest, cayenne, lemon pepper, Parmesan, chile powder, garlic powder or just about any other flavor or mix of spices, to add a personal touch.
Crispy Roasted Garbanzo Beans – A Simply Delicious Healthy Snack
These are addictive…healthy, crunchy and deliciously addictive…and very easy to make. All you do is:
- Preheat oven to 400 degrees
- Drain one 15 oz can of garbanzo beans (chickpeas)
- Rinse with water and dry thoroughly with paper towels
- Toss the dried garbanzos with 1Â½ Tbsps of olive oil
- Roast on a sheet pan for 25-35 minutes until the beans are golden brown and crunchy (start checking at 20 minutes)
- Sprinkle with salt and whatever spices you like (try a little cayenne, garlic powder and onion powder…Spicy!)
- Let cool and serve…Simply delicious!
